This recipe makes a base Indian spice mix which you can modify to suit your meal/use as a base from which make various curry pastes. To turn it into a paste, add any extra spices or herbs desired plus ginger and garlic and some water or oil (depending on how weight conscious you are being at the time). Rather than give exact quantities, I have listed this recipe in “parts” which you can use as a ratio to make however much or little you need. It smells and tastes delicious.
Ingredients
- 2 parts garam marsala
- 2 parts cumin
- 2 parts coriander seeds
- 1 1/2 parts smoked paprika
- 1 part sweet paprika
- 1 1/2 parts turmeric
- 1 part ground cardamon
- 1 part ground black peppercorns
Method
- Mix all ingredients in a mortar and pestle and grind to combine.
- Store in an airtight container.
